Homemade Fresh Salsa

This salsa is simple and easy and you can add or remove ingredients to your liking. It works especially well if you have an automatic food chopper, but you can simply chop up the ingredients yourself and mix everything together. As always, this salsa gets better with time!

Ingredients:

1 fresh red tomato, diced into small pieces
1/4 to 1/2 of an yellow bell pepper, seeded and chopped
1/4 to 1/2 of an orange bell pepper, seeded and chopped
2 to 3 Tablespoons chopped garlic
1 small to medium-sized yellow onion, chopped
juice from 1 lime
juice from 1 lemon
salt and pepper to taste
Italian seasonings (optional)

Directions:

Chop the peppers, onion and tomato into small pieces and put into a bowl. Add garlic and halve the lemon and the lime. Squeeze as much juice as you can out of each half over the mixture. Add salt and pepper, to taste. Refrigerate until serving this salsa with tortilla chips. This salsa gets better with time, so it can be made 24 to 48 hours in advance before a party. It's especially good when made with homegrown or Farmers Market fresh vegetables and homemade tortilla chips. Make your own tortilla chips by cutting a soft tortilla into sections, much like you would slice a pizza (you can use a pizza cutter). Deep fry in oil on the stove top or use a deep fryer. Get funky with it and use tomato or spinach tortillas for a yummy twist. For a desert chip, deep fry regular tortillas and sprinkle a mixture of sugar and cinnamon on top while still hot.
