Homemade Butter
You'll need one cup of very cold heavy cream, ½ cup ice water, salt to taste, and an electric blender. For best results, make it one batch at a time.
Begin by blending the cream on low speed until it begins to thicken. Don't be surprised if it takes several minutes before it starts to become thick.
While the blender is still on, remove the measuring cup in the center of the lid, and add the ice water. Select the "stir" option and blend the ice water and the heavy cream until butter forms.
Next, pour off any remaining liquid, and allow it to drain over a bowl covered with cheesecloth or in a strainer. Stir in a dash of salt if desired, and store the homemade butter in the refrigerator or freezer in a tightly sealed container until ready to use.
Horseradish
Horseradish butter has a tangy sweet flavor, and if you like the taste of horseradish, you have to try this tasty homemade blend.
Stir in one tablespoon of prepared horseradish into one cup of homemade butter. Horseradish has a zesty bite, so add more or less according to your individual preference.
Mustard and Dill
Mustard and dill are a delicious combination. Stir ¼ teaspoon of dill and ¼ teaspoon of dry mustard into one cup of homemade butter until the mixture is well blended.
Parsley and Chives
If you love the flavor of parsley and chives, this homemade spread is a must. Blend one tablespoon of freshly snipped chives and one tablespoon of freshly snipped parsley into one cup of homemade butter.
Zesty Lemon
If you've never experienced the flavor of creamy lemon spread, give this one a try. Mix one tablespoon of grated lemon peel, two tablespoons of lemon juice, and a tablespoon of freshly snipped chives with one cup of freshly churned homemade butter.
Storage
Homemade herbal butter can be stored up to two weeks in a container with a tight fitting lid at a temperature of forty degrees or less. Store it between four and six months in the freezer at a temperature of zero degrees or less. When properly stored your homemade herbal butter will taste as fresh as the day it was made.
