The best homemade ice cream for the old fashioned Fourth of July celebration is custard ice cream. Custard type ice cream is the creamiest ice cream. Traditional old fashioned Fourth of July homemade ice cream is always made by making custard on the stove and then freezing it.
It may be tempting to throw all the ingredients into the homemade ice cream freezer. This is a bad idea if you want the creamiest, richest and most delicious homemade ice cream for your old fashioned Fourth of July celebration.
The ingredients for old fashioned custard ice cream are 1 ¾ cups milk, 2 ½ cups heavy cream, 1 cup white sugar, 1 vanilla bean (split in half, lengthwise), ¼ tsp salt, and 6 egg yolks. This is an old fashioned Fourth of July celebration, not a diet club meeting.
In a large saucepan over medium heat, combine the milk, cream, ½ cup of the sugar, both halves of the vanilla bean and the salt. This portion of the mixture for the old fashioned homemade ice cream should be scalded until small bubbles appear and then removed from the heat.
The next step in cooking the Fourth of July celebration ice cream is to beat the egg yolks and the rest of the sugar together in a bowl. If you don't have an egg separator, use the old fashioned method of separating eggs. This is accomplished by shuffling the egg back and forth between the two cracked shell halves until only yoke is left.
Once the egg mixture is beaten, mix it together with the scalded ingredients from the saucepan. Now put the custard back onto the stove and stir constantly over low heat until the custard starts to thicken. Scrape the insides of the vanilla bean into the homemade custard for the old fashioned Fourth of July celebration ice cream.
Prior to freezing, the ice cream custard must be refrigerated to cool completely. Once the custard is cool, you are ready to begin freezing the old fashioned ice cream for your Fourth of July celebration. Get out the ice cream freezer and let's begin.
Be sure the center of the ice cream freezer and all the other parts are clean. Pour the custard into the center container and put the cover on. The paddles should be in the center of the container before closing and locking the lid.
In order to freeze the ice cream for the old fashioned Fourth of July celebration, ice and rock salt will be needed. Fill the outer ring of the ice cream freezer with ice and add about a cup of ice cream (rock) salt.
Family members rotate turns turning the crank of the old fashioned ice cream freezer. Add ice and salt as the ice melts. When the crank will no longer turn the homemade ice cream is ready for the old fashioned Fourth of July celebration.
Experiment with different flavorings, fruit and nuts as additions to the homemade ice cream. This is an old fashioned Fourth of July tradition that can be passed on through the generations. Just imagining all the scrumptious combination possibilities will make mouths water at the thought of the Fourth of July.
