Ingredients

Serves 4
1/2 cup Water
1/3 cup + 2 tbsp Sugar substitute (Truvia)
3 tbsp Lemon peel, grated
3/4 cup Lemon juice
2 1/2 cups Heavy whipping cream

Directions for Homemade Lemon Gelato

Heat water and 1/2 cup of heavy whipping cream slowly in a small saucepan. Stir in sugar substitute until dissolved. Using a whisk to add a small amount of the saucepan contents to the egg yolks. Whisking constantly, add the warmed egg yolk mixture to the saucepan. Add lemon peel. Stir constantly. Cook over low heat until the mixture coats the back of a spoon.

Fill the ice cream freezer cylinder two-thirds full. Freeze according to manufacturer's directions. Refrigerate remaining mixture until ready to freeze. Store in a freezer container. Freeze for 2-4 hours before serving.
