Great Recipes for a Potluck or a Mexican Themed Get-Together

Want a theme for that next get together you have to host? How about a Mexican theme? Everybody seems to love salsa and chips, go a step further with a great 7 layer bean dip to go with it! Add a tasty Chicken Tortilla casserole and your all set! Here are some easy homemade recipes that will give you a great start on the Mexican theme and be the hit of the party!

Easy Salsa

2 large cans (28 oz.) Stewed Tomatoes
1 - 8 oz. can of Chopped Green Mild Peppers or 2- 4 oz. cans
1 - ? chopped or minced ( chop to size desired) jalapeno peppers, depending on how hot you want the salsa, add more jalapenos for more heat
1/4 cup chopped onion
2 cloves minced garlic
1/4 cup chopped cilantro, or to taste

Mash tomatoes and green chilies in large bowl. Cut by hand or use food processor to mince garlic, jalapenos and chopped onion. Stir in with other ingredients. Cut or snip desired amount of cilantro and add to mixture. Add salt and pepper to taste. Mix together well, find that big bag of tortilla chips and get ready for everyone to rant over your great salsa!

Super 7 Layer Mexican Bean Dip

1 - 16 oz. can of refried beans
1 - 16 oz. container of sour cream
1 - 16 oz. container of guacamole
1 - 15 -16 oz can of salsa, or 2 cups of Easy Salsa, from recipe above
1/2 cup chopped onion
1 - 8 oz can of sliced black olives
2 cups shredded cheddar cheese

Layer all ingredients in order given in a 1 1/2 qt. casserole dish. I like to save a few of the black olives to sprinkle over the top of the cheese just to look good. You can also add chopped cilantro if desired. Hope you got that really big bag of tortilla chips because everyone will be coming back for seconds with this dip!

How about a great Mexican casserole to go with the salsa and dip? This casserole is a sure hit every time I take it to a potluck or make it at home for dinner, everyone loves it!

Chicken Tortilla Bake

3 cups shredded cooked chicken
2 cans (4 oz. each) chopped green chilies
1 cup chicken broth
1 can (10-3/4 oz) condensed cream of mushroom soup,undiluted
1 can (10-3/4)oz) condensed cream of chicken soup, undiluted
1 small onion, finely chopped
12 corn tortillas
2 cups shredded cheddar cheese, divided

In a bowl, combine the chicken, chilies, broth, soups and onion; set aside. Warm tortillas in the microwave according to package directions. Layer half of the tortillas on the bottom of a greased 13- in x 9-in baking pan, cutting to fit pan if desired. Top with half of the chicken mixture and half of the cheese. Repeat layers.

Bake, uncovered, at 350 degrees or 30 minutes. Garnish with sour cream if desired.
