Mole De Puerco (Pork with chile sause)

Ingredients needed:

----1 lbs of pork with bone
----9 whole chile guajillo (guajillo chili )
***you can deseed them. If you'd like****
----OPTIONAL for spicyness add 2 chiles de arbol
----1 piece of garlic
----1 Bay leave
----Cumin
----Black pepper (whole or power)
----Cloves
----Salt
----small piece of onion

First you need to cut your pork meat into chucks. After that is done make sure to wash it off really good. Then place the pork in a pot with water and add a little salt to taste. Next you need to let it boil until the water runs out. While the pork cooks.

You can begin to wash the chiles needed and put them to boil. In about 3-5 minutes on high the chiles will change color. Whenever they do, go ahead and put them in the blender. Add 5 pieces of cumin, 2 cloves, 1 black pepper and a dash of salt. Add about 1 and 1/2 cups of water into blender and blend until it's like a milkshake.

After that let the pork meat fry in it's own oil, you do not need to add any oil. Let the meat get brown on all sides.
Once the meat is brown you can add in a small piece of onion and let it soften up a little with the pork meat.

Next you will need a food strainer. Strain the sauce from the blender over the pork meat. Add 1 bay leaf. Let the pork meat and sauce boil for 4-5 minutes. And now you can enjoy you mouth watering Pork Mole.

If you would like you can make some rice or beans to go with it. You can eat this with flour or corn tortillas.

I hope you enjoy!
