Homemade Potato Chips

Potato chips are great. It doesn't matter if they're store bought or not. Potato chips have become a main stay in many people's homes. Being able to make your own potato chips not only gives you a slightly healthier option but you will also be able to add whatever spices and seasonings you want.

The first and main item you will need is the potatoes. Choose nice potatoes for chips. You want to look for quality potatoes for frying as you would if you were going to bake them. At this point you may decide whether to peel the potatoes or not. If you like the peel leave them on. Scrub your potatoes clean and set aside.

Now it's time to get your oil ready. Any oil will do for frying but I have found I like my chips fried in canola the best. Add one large bottle of oil to a large saucepan. Slowly start heating the oil on low heat while you slice your potatoes.

If you have a special potato chip cutter by all means use it. I have one that makes "ruffles"-style chips. You do not need a special cutter though. A good paring knife will do the same you just won't have a fancy design.

You must remember to slice your potatoes really thin. Thick slices will take longer to fry and in the end you'll end up with a greasy slice of cooked potato that won't taste like a chip. As you slice the potatoes place them in a large bowl of ice water. As you get close to being done with your slicing turn your oil up to medium-high heat.

As you get your chips sliced and iced down it's time to check your oil. Your oil should roughly be around 375 degrees F. that registers on a thermometer.

Drain your potato chips using a colander. Shake the colander so any excess water will come off the chips. Gently pat dry using paper towels or a clean cheesecloth.

Do not fry all the chips at once. A handful will do. Fry the potatoes until they reach a nice golden brown. Use metal tongs to take the chips out as they get done.

Drain your golden chips on paper towels and season right away. You can choose your own special blend of spices to flavor your chips.

Even if your not a fan of potato chips you can make these for your children or for a party. You can also do the same with sweet potatoes if you like. Season with a mixture of spices to make a different and unique chip that you can serve to your family and friends.
