Homemade Valentine's Day Rice Krispy Treats

I love holidays. Valentine's Day is no exception. Whether you have a special someone or not, I think of Valentine's Day as a way to say, "I thought of you" to many co-workers.

Think of all the people you know who don't have a special someone in their lives who would smile just a bit brighter and walk just a bit taller knowing that someone (you) thought of them on such a fun and festive day. While most people think of chocolate chip when they hear Valentine's Day cookies, here's a fun way to change it up. You'll be making special Valentine's Day cookies, just not the chocolate chip variety.

Everyone I know loves Rice Krispy Treats. To make these special Valentine's Day cookies, mix up a batch of Rice Krispy Treats as you normally would - except add some food coloring to the marshmallows as they melt to make them a soft pink. The recipe is at the end of the article in case you need to read it again.

Add red food coloring slowly as you blend it with the marshmallows, until you have a soft pink color. Remember the old adage - you can always add more.

Put the Valentine's Day cookies in a pan, just the way you normally would. Now comes the fun!

Using a 2 inch heart shaped cookie cutter, cut out as many heart shapes as you can from your Valentine's Day Rice Krispy Treat cookies. Get two tubes of pre-made red frosting, the kind that comes with tips.

Use the tips to outline the cookie treats with red frosting. Make a curved line to represent a smile and two dots to represent eyes in the center area of the heart shaped Valentine's Day cookies.

Bring them to work and share them with your co-workers on Valentine's Day. This will be the only Valentine's Day treat that many of them get and whether they tell you or not, you'll make their day.

Rice Krispy Treats
3 tablespoons margarine or butter
1 (10 oz.) package regular marshmallows
1/4 teaspoon vanilla
6 cups Rice Krispies®

Melt the butter and marshmallows together over low heat. When melted, remove from heat. Add the vanilla and mix again. Then stir in the Rice Krispies, mix well, and pour into a buttered cake pan.
