Come and Try Out These Yummy Vegan Pancake, French Toast, and Waffle Recipes!

Some people are vegan by choice, but some people are also lactose intolerant, or have health problems and need to eat mostly vegan foods. Any vegan knows that it can be difficult to find already prepared items at stores, so it's often necessary to cook at home. As a person who has eaten mostly vegan on and off through-out my life, I have had many opportunities to try out and experiment with various vegan recipes. I have a favorite vegan pancake and french toast recipe that I would love to share with you guys!

Vegan Pancake Recipe:

2 cups white flour
half cup brown flour
2 tbsp sugar
2 tbsp baking powder
1 tsp salt
1 tbsp vegetable oil
1.5 cups soy milk
1 cup water [you can instead use 2.5 cups of soy milk if you prefer to not use water]
dash of cinnamon
Also feel free to throw in nuts or fruits if you wish.

Mix white and brown flour into a large bowl, throw in sugar, baking powder, salt, and cinnamon. Mix Well. Pour soy milk, water, and vegetable oil into the dry mixture. Mix well. Throw in your choice of fruits or nuts. My favorite is to use blueberries! Let mixture stand for a few minutes, so the pancakes will be light and fluffy.

Melt a bit of margarine over medium-high heat. Once melted, pour a desirable amount of the pancake mixture onto the griddle. When the middle is bubbly, flip over and cook until golden brown. Makes nine large pancakes.

Vegan French Toast Recipe:

12 ounces silken tofu
1/2 cup soy milk
2 tbsp honey or maple syrup
1 tsp cinnamon
1/2 tsp salt
2 tbsp veggie oil
4 to 6 slices of bread.

In a blender, combine all ingredients and mix until smooth. Pour mixture in a bowl. For the ones who are unsure how to go with the silken tofu. I pressed the tofu semi dry with paper towels and then crumbled up the tofu. Pressed it once again, then put it into the blender. It mixes better than just throwing in blocks of tofu.

Dip each slice of bread into the mixture until coated. [I found dipping, and then spooning some mixture onto the bread a bit easier. Also spreading with the spoon, because it doesn't coat like eggs would.]

On a lightly oiled griddle, brown the battered bread on each side. Serve hot.

Vegan Waffles Recipe:

2.5 cups flour
1 tsp vanilla extract
1/4 cup sweetener (use whatever you prefer such as honey, molasses, sugar, etc)
4 tsp baking powder
1 stick margarine (1/2 cup) melted
1 cup soy milk
1 cup water
dash of cinnamon

Mix baking powder and flour first then add the rest. Make sure the mixture isn't too liquidly or the waffles will not be as firm. Brush waffle griddle with olive oil, then pour the mixture, spread with spoon. Mixture should make 8 waffles.

    Thanks for this. Some people require vegan recipes through allergies, not just intolerances. They are different. Keep up the good work. :o)

    Thanks for the article, but honey is not considered vegan.
    For French Toast, I use some smashed banana and egg substitute and some cinnamon and Earth Balance vegan butter. Very delicious!

    Just so you know, margarine has milk product in it, unless you use a specific type that says it doesn't. I use natural balance. Thanks for the great recipe!
