BROTH:
1 family sized pack chicken w/ skin (for flavor)
1 celery stalk-chopped
1 lg onion-chopped
2 cloves fresh garlic-pressed
1 carrot-grated
add plenty of salt to cut the smell of the boiling chicken
7 chicken bouillon cubes or 2 tbs of chicken base
In a large soup pan add rinsed chicken and fill to about 3 inches from the top, with water (about 8 cups). Boil until the chicken is done or comes easily from the bone. About 20 min. Remove chicken and set aside. Put broth on simmer, add bouillon cubes or base and the other ingredients.
NOODLES:
2 cups all purpose flour
2 tbs Crisco grease (shortening)
2 eggs
salt to taste
water
In medium bowl add flour and salt mix and test taste for desired amount. Then add Crisco. Use a pastry knife or butter knife to 'chop' the shortening up until it holds a form. Mix in eggs. Then (I don't know the exact amount) add a little water at a time. Make a dough that is spreadable. Not too much water is needed. Approx 2 tbs or more. Mix well and place on a floured counter and roll. Cut into strips, about an inch wide and 3 inches long. Put into simmering broth.
When finished with the noodles, peel chicken clean and pull into pieces and add to broth and noodles. Allow the noodles to cook approx. 20 min.
Homemade Biscuits are good with this.
Pot Roast
2 to 3 lbs. beef roast seasoned and seared in frying pan with a small amount of oil, on HIGH for 10 sec on both sides
1 bay leaf
2 cloves garlic pressed
Tony's seasoning recommended but you can choose others such as seasoned salt
5 lg potatoes, peeled and quartered
1 bag baby carrots OR 1 bag carrots peeled and quartered
1 lg onion, quartered
1 1/2 tbs Worcestershire Sauce
Put carrots and potatoes in a crock pot. Place seared roast on top. Add a little more seasoning. Add water about 3 inches above the roast, add bay leaf, Worcestershire. sauce, onion and garlic. Cook on high 3-4 hours depending on size of roast. The roast will come apart and the veggies will be soft when done.
Lasagna
Sauce:
2 lbs- hamburger meat (ground chuck preferred)
1 lg- onion-chopped
Garlic powder
Italian seasoning
2 lg- cans tomato sauce
1 can- mushrooms -chopped
1 med- bell pepper-chopped
2 tbs- sugar
Fry meat and onions, add salt. Drain fat and return to pan. Add all ingredients, salt and season to taste. Simmer.
Noodles:
1 pack lasagna noodles
2 tbs veg oil
salt
Turn oven to 375 degrees.
Boil 8 cps water in lg pan. Add noodles, cook until done. Not too soft not too firm, approx 15 min. When water begins to boil add oil so noodles don't stick together. Drain, run cool water over them and set aside.
You can use a variety of cheeses. All types are good. I use fresh Parmesan, cheddar, and mozzarella. One cup of each for layering. Also, I use a tub of cottage cheese. It all depends on what you like and how much you like.
Use a large casserole and spray with non stick cooking spray. Layer noodles, then meat and cheeses. Repeat, topping with the shredded cheeses. Bake for 30 min, uncovered.
Makes 8 servings.
Served good with buttered French garlic bread and tossed or Cesar salad.
Meatloaf
3 lbs ground chuck
1 med. onion-chopped
1 green pepper-chopped
2 eggs
1 pack saltine crackers-crushed
1/4 lb cheddar cheese-crumbled
1 small can tomato sauce
2 tsp garlic powder
2 tsp salt
2 tsp pepper
Preheat oven to 375. Mix all ingredients together in medium mixing bowl, done best when you use your hands to mix. Place into small casserole dish, and shape into loaf. Note: cut loaf into 2 halves to shorten cooking time. Bake uncovered approx. 1 hour. Check middle to see if it is thoroughly cooked.
Serves 6
Enchilada Casserole
Sauce:
2 cans red enchilada sauce
2 lbs hamburger meat
1 med. onion - chopped
garlic salt
pepper
1 can green chilies-chopped
Crumble and fry meat and onion in lg frying pan. Drain fat. Add 1 can sauce and green chilies. Simmer. Preheat oven to 375.
Layering:
12 corn tortillas (white or yellow)
8 oz shredded cheddar cheese
Warm other can of sauce in small pan. Spray bottom of 8x8 glass casserole. Dip tortilla in sauce and lay a layer of tortillas into the casserole. You will overlap and that is okay. Add meat mixture and cheese. Repeat; topping with cheese. Pour remainder (if any) sauce over top.
Bake for 20 min or until cheese bubbles.
Makes 4-6 servings
Easy Cheesy Garlic Biscuits
3 cups SELF RISING flour
1/2 cup milk
1 cup crumbled cheddar cheese
salt
garlic
margarine
Preheat oven to 350. Mix flour and milk. Stir in cheese and add garlic and salt. Spoon dough (about golf ball size) onto a well 'buttered' cookie sheet. Bake for 25 minutes.
** Also good to make like a 'pigs-in-a-blanket'. Use the same recipe just put a little smokey or hot dog in the middle and wrap the dough around it, and make it smaller. Kids love it!
GERMAN CHOCOLATE CAKE
CAKE:
1 boxed German Chocolate cake mix
Prepare cake as directed on box
FROSTING:
1 cup evaporated milk
1 cup sugar
3 slightly beaten egg YOLKS
1/2 cup margarine
1 tsp. vanilla extract
1 1/2 cups coconut (sweetened)
1 cup pecans
Mix all (EXCEPT THE COCONUT AND PECANS) in medium saucepan on medium heat. Stir until mixture thickens, approx 10 min. Remove from heat and add coconut and pecans. Mix well and frost the cooled cake. MMMMMMMM Good when warm!!
