Ingredients you will need for this recipe:
2 cups shredded zucchini
2 cups sugar
2 cups flour
3 eggs
2 1/2 tsp cinnamon
¼ tsp salt
2 tsp vanilla
¼ tsp baking powder
2 tsp baking soda
1 cup vegetable oil
Mix eggs, sugar, and oil together. Then add baking powder, baking soda, flour, vanilla, cinnamon, and salt, mix by hand. Peel zucchini and chop with a food processor. If you don't have a food processor, chop the zucchini in small thin strips until you have two cups. Drain zucchini and add it to your mixture, mix well. Grease and flour two loaf pans. Pour mixer evenly between the two pans. Bake at 350 for one hour. You may want to check it after 30 minute by inserting a toothpick in the center of the loaf of bread. If the toothpick comes out dry, then your bread is done. Over baking the zucchini bread will make it not be as moist.
Carrot bread is another favorite and it goes good with your morning coffee. These are the ingredients you will need for this recipe.
1 ½ cups of finely shredded carrots
1 cup of sugar
¼ tsp salt
1 egg
1 tsp baking soda
2 tsp cinnamon
½ cup shortening
½ tsp allspice
½ cups of flour
1 tsp baking powder
Mix together sugar and shortening until mixture is creamy. In another bowl mix flour, baking soda, baking powder, allspice, salt, and cinnamon together. Add egg and carrots and mix well. Pour mixture into greased, floured loaf pan. Bake at 350 for 55 minutes and check in between that time to make sure your carrot bread does not bake to long. If you want your carrot bread moist, check carrot bread after 45 minutes with a toothpick. Insert toothpick in the middle of the loaf and pull out, if toothpick comes out dry, your carrot bread is done.
Always remember people's oven temperatures vary from others. When using an electric oven the time it takes for something to bake actually takes less time than a gas oven. Just always be sure to check stuff you are baking even if the time isn't up yet. It is better to check in between times than to have something over baked. Once bread is done baking, take bread out and allow to cool for 15 minutes. Slice bread, spread with butter and enjoy!
