How to Make the Admiral's Mushroom Pasta

I have just received a reminder of a delightful pasta dish that I had forgotten. I know almost everyone loves pasta dishes. This recipe is an easy to prepare (even Don Pennington can make this one) after a hard day of work or play. We'll rename this quick Roman comfort food, the Admiral's Mushroom Pasta. It's time once again for someone to put on a fresh pot of Columbian Coffee and put some Italian love music in the CD player and light the candles.. Roll up or sleeves, take off our rings, wash our hands and get cooking.

The Admiral's Mushroom Pasta

Ingredients:

1 pound button mushrooms quartered (Sub your favorite mushroom)

1 softball sized onion fine diced

1 cup chopped celery

1 large carrot grated

2 Tablespoon Butter (Butter is best)

2+ Tablespoon Garlic powder (Not garlic salt)

2+ Tablespoon olive oil (your favorite)

1 teaspoon grated nutmeg

¼ cup all purpose flour

1 15oz can chicken broth/stock (Vegetable broth/stock works too)

½ pint whipping cream (room temp}

1 pound grated mozzarella cheese

1 pound pasta cooked to pkg directions (Your favorite shape)

Parmesan cheese for garnish

Directions:

In a large deep skillet melt butter and add olive oil and Garlic powder, saute mushrooms, onions, celery, carrot, till tender. Sprinkle flour over all and stir till begins to color. Add chicken stock stir till boils add nutmeg and cream continue to stir till thickens. When pasta is finished cooking, drain and toss with mozzarella cheese then toss with this saute mixture. Serve with parmesan cheese on side for garnish.

Note:

If you serve an ice cold tossed green salad and a warm crusty bread you will have a romantic feast fit for an Admiral and his bride, or better yet fit for a wonderful person like you and your best friend.

A dear friend has suggested substituting diced Portabella mushrooms for the button mushrooms and beef broth/stock for the chicken broth/stock.... That does sound interesting. I guess it depends on your taste buds as to what your decision is. Remember the recipe is only a Rand McNalley road map you must decide which road to take.

This recipe is great reheated the 2nd day. I think it makes a great breakfast/brunch idea. Please allow your imagination to soar like an eagle.
