So I bet you are very curious by now on what chocolate mice are...well, they are a chocolate candy, much like cordial cherries, that are made to look like mice. You can not buy these adorable candies in any store, and they are very simple to make at home, they don't cost much neither! So if you love to bring something different and great to gatherings or potlucks, here is a new and wonderful creation, that my family has been doing for years now!
All you are going to need is a few simple items you can find at any grocery store. The simplest items are what I will start with first, and work down to the harder to find, or actually the less usual items. The first item you will be looking for will be Hershey's Kisses, you want to get them in regular milk chocolate or in white chocolate, and they can be plain or with any filling you so choose, it will not matter. The next of the simple items will be, Maraschino cherries, with the stems on them...the stems will be the tails of the mice, so make sure your cherries have stems on them! Now you will need almond slivers, to use as ears for your mice.
Now I will be moving on the one item that may be difficult to find for some, being that not very many people have heard of it or ever used it. Even though it may be difficult to find, most grocery stores carry it, but it may not be easy to find the isle your local grocery store keeps it on, being that some stores will differ from others. So, the next item you will be looking for is called Almond Bark. Almond Bark is a type of chocolate used to make candy...but is different from baking chocolate. Almond bark only comes in white chocolate or in milk chocolate, so make sure you get the type that will match your chocolate kisses!
When it come to the assembling of your chocolate mice, you are going to need a medium sauce pan, for melting the Almond Bark down in. You will also need a sheet pan, and you will want it covered with some wax paper to prevent the wet chocolate from sticking to the pan while it dries. Now it is time to get to creating your own chocolate mice!
For starters, I will help you out with a helpful hint, that I have learned over the years, to take time and difficulty off of assembling your chocolate mice. You may want to unwrap some of the chocolate kisses before you do anything else, so you don't have to do it later on in your assemply...you will want to unwrap approximately as many kisses, as the number of mice you plan on making, as these will be the heads of your mice. Also, you will want to take your cherries and dry them, to help the Almond Bark to stick to them. You will use your sauce pan, and melt the almond bark according to the directions on the package. Once you get that all done, you will move on to the next step.
Now it is time to assemble your mice! You will now take your cherries, and dip them into the melted Almond Bark, holding them by the stems, to prevent from putting your hands in the hot Almond Bark. After dipping the Cherry in the Almond bark, you will then place it on the baking sheet, on its side, so that the stem of the Chery looks like the tail of a mouse. You have now created the body of your mouse. You will now take two almond slivers, and stick them to the still wet chocolate covered cherries, rounded end up, so that they look like mouse ears. Now you will take your chocolate kiss, slightly dip the bottom of it in the Almond bark, and stick it to the opposite end of the chery as the stem is...this now should look like a mouse...if not, them you did something wrong!
Over time you will get better at making these adorable and tasty treats, and you will also find great ways to use them. My personal favorite thing to top with these wonderful mice, is cheese cake...mice love cheese, and cheese cake goes great with chocolate and cherries! Trust me, everyone, including yourself, will love this new idea and will want to know where you got them...and the greatest part of that, is you don't have to give your secret up!
