There is no need for a knife to cut this adorable Easter Bunny cake because it's made of cupcakes. By simply adding frosting and a few simple decorations, you can transform a dozen cupcakes into something spectacular. The best part is that there is a surprise hidden in each piece!

It is a tradition in our family to make this Easter Bunny cake every year. Kids love to frost and decorate the Easter Bunny cake, but they enjoy eating it even more!

Ingredients:

1 box white cake mix

ΒΌ cup jelly beans

1 can white frosting

Decorating Gel

2 large marshmallows

Green sugar

Red or pink sugar

1 cup coconut

12 cupcake liners

Directions:

Preheat oven to 350 degrees. Prepare cake batter as directed on package. Gently stir in the jelly beans, setting aside two of the same color for decoration. Place cupcake liners in cupcake tins. Pour 1/4 cup batter into each liner. Bake 12-15 minutes, or until a toothpick inserted in the middle of cupcakes comes out clean.

Let cupcakes cool completely on cooling rack.

Frost each cupcake generously with white frosting. Immediately pour coconut onto cupcakes and gently press into frosting.

Arrange 8 cupcakes in an oval form then add two cupcakes per side to the top of the oval to form ears.

To decorate:

Cut two marshmallows in half. Dip the sticky sides of two marshmallow halves in green sugar and two halves in red sugar.

Place a dot of frosting on the bottoms of the two green marshmallow halves and place on center two cupcakes to make eyes. Dot two jelly beans with frosting and stick in the center of marshmallows to complete eyes.

Place dots of frosting on the bottoms of the two red marshmallow halves and place on cupcake cakes to form cheeks. Draw mouth between cheeks with frosting gel.

Carefully sprinkle red sugar in center of ear cupcakes. Fill any holes with coconut.

Enjoy!
