You will need: 100g unskinned almonds
6 egg whites
100g plain flour
½ teaspoon of almond essence
125g caster sugar
Step 1: preheat the oven to 180 degrees c. Beat the egg whites, and add the sugar and almond essence slowly.
Step 2. Add the flour and almonds into the mixture whilst still beating.
Step 3. Lightly grease a non-stick loaf tin and spoon the mixture in.
Step 4. Bake in the oven for 35 to 40 minutes.
Step 5. Once the bread has cooled, put it into the freezer for about 20 minutes (this will make it much easier to slice)
Step 6. Put the slices on a rack and dry them in the oven at 100 degrees until crisp.
