How to Make Appetizers with Neufchatel Cheese

Here is a delicious appetizer recipe for those times you need something in a hurry. The really great thing about these little pinwheel sandwiches with Neufchatel cheese is that people don't know what they are! They have no idea how easy they were to make, and you don't have to tell them! Quick and Easy, you can whip a bunch of them up without spending a lot of money, too. They make a nice presentation on a platter.

Another advantage to these is that you can make them ahead of time, and they are actually better! It is so important, though, for you to be sure they are sealed airtight so the tortilla shells don't dry out. I keep these prepared in the fridge for snacks quite often, and I use a plastic container with a tight lid.

Ingredients:

Neufchatel Cheese; one block. (It is inexpensive, and you can find it with the Cream cheese.)

Black Olives: One small can. Either buy them chopped, or chop them finely yourself.

Minced Dried Onion: 1 Tablespoon

Dried Parsley: 1 Teaspoon

Flour tortilla shells

Instructions:
Combine ingredients well.

Spread on a flour tortilla, leaving a clean edge all around of around 1/4 ". Be sure you don't leave areas uncovered, but don't get it too thick, either. Remember, you are rolling this.

Starting at one edge, roll neatly, jelly roll style.

With a sharp knife, cut little circle pinwheels.

These appetizers are actually better a little later.
