Apple BBQ Chicken Thighs
Ingredients:
6-8 thighs (one package)
2 cups Smoky BBQ sauce (Your favorite)
2 cups Applesauce (your favorite not chunky)
1 Tablespoon Kosher salt
1 Tablespoon ground black pepper
1 Tablespoon Garlic Powder (Not garlic salt)
1 Tablespoon Onion Powder (Not onion salt)
1+ Tablespoon Cayenne pepper
Directions:
Day before: Mix Kosher salt, black pepper, Garlic powder, Onion powder, and Cayenne pepper and set aside. Mix BBQ Sauce and Apple sauce together in separate bowl and set aside. Place chicken on a double layer of heavy foil. Rub with dry spice mix make sure to rub all sides. Pour about half the sauce over chicken. Close foil up tight and place in a dish...place dish in the refrigerator over night. Mix remaining spices with reserved sauce cover and refrigerate. Next day preheat grill to Med-High heat. Place foil wrapped chicken thigh packet on grill for one hour turning every 15 min. After one hour remove chicken from foil and place directly on grill. Baste with the reserved sauce spice mix. Turn and baste frequently. 30 min.
Notes:
This chicken is good right from the grill or cold the second day. I like a good pasta salad, a crusty bread, some cheese, and some fruit for s delightful picnic.. To be honest I make this just for the two of us. I love the cold chicken thighs for lunches later in the week. They make a great addition to a chef's salad for lunch at work.
