Oven Baked Dutch Apple Pancake
Ingredients:
2 cans apple pie filling (your favorite brand)
½ stick room temp butter (4 Tablespoons) Butter is better
1 Tablespoon ground cinnamon
1 Tablespoon instant Tapioca
3 large eggs
1 Tablespoon cream (use what you put in your coffee)
½ cup sour cream
½ cup all purpose flour
½ teaspoon sea salt
Powdered Sugar for dusting
Directions:
Preheat oven to375. Put apple pie filling, room temp butter, cinnamon, Instant Tapioca into a 10" deep iron skillet or Dutch oven. Warm on stove top and stir till fully incorporated. I know it smells grand try to not sample more than a spoon full. In a bowl whip eggs till they are frothy. Whisk in cream, sour cream, flour and salt It is OK if it's a bit lumpy. Pour this mixture over the fruit mixture. Slide into preheated oven and bake 25-30min or till golden brown. Dust with powdered sugar as soon as you remove it from oven. Allow ro stand 5 min before serving. Spoon onto individual serving plates and dust a 2nd time before serving. Best served warm. Whipped topping would be a decadent enhancement. You're shocked I didn't put garlic in it aren't ya.
Notes:
This will serve 4-6 folks. I feel the leftovers make a great meal the 2nd day re-heated in the microwave. This recipe works well with cherry pie filling or Blue Berry Pie filling. I would eliminate the cinnamon for these two. The choice is yours....or make all three.
Make a fresh pot of Columbian Coffee and invite your friends for a feast. Make some fresh squeezed juice or at least squeeze the carton. Perhaps you would prefer a quiet candle light diner for two. Put a little mood music in the CD player, Turn off the lights, lite a few candles, slip into your favorite red Teddy enhanced with the fish net stockings and the fuzzy red slippers and enjoy the romance.
