Baked French Toast
Ingredients:
Vegetable spray for greasing pan (Pam)
6 Large chicken Eggs (Duck eggs will work)
2 ½ cups heavy cream (Milk will work but will lighten the flavor)
1 cup Real Maple Syrup (Sugar free will work)
2 Tablespoon ground Cinnamon (divided)
½ teaspoon table salt (fine)
1-2 Tablespoon Orange Marmalade (Your Favorite brand)
½ loaf day old sourdough bread cut in 1" cubes (Use your favorite crusty bread)
2 cups fresh (frozen, thawed, drained) strawberries diced
¼ cup granulated sugar
Directions:
Place oven rack in middle position and preheat oven to 375. Spray 9 x 13 pan and set aside. In a large deep bowl place eggs and whip till frothy. Add cream, Maple Syrup, Marmalade, salt and 1 Tablespoon of cinnamon and whip until incorporated. Add cubed bread and push until all soaked and absorbed. Stir in strawberries and pour into greased 9 x 13 pan. In a separate bowl stir remaining cinnamon and granulated sugar together and sprinkle evenly over top of 9 x 13 pan. Bake 45-50 min or till golden brown and egg mixture has set. Spoon Baked French Toast on warm serving plates and enhance with burrer and warm Maple Syrup...or your favorite pancake syrup.
Notes:
For an interesting strawberry syrup place a 16oz jar of strawberry preserves in a microwave safe bowl, add a stick of real butter and 1 teaspoon of salt. Microwave on high 60seconds and stir repeat for 30 seconds and serve or Baked French Toast or your favorite pancakes or waffles.
For best results cut the bread the day before and allow to air dry under a tea towel. This allows the bread to absorb even more of the flavors of the custard.
If you must have meat with every meal dice a package of those little smokies and stir them in when you add the strawberries. 2nd idea would be lay out a pound of bacon on a baking sheet and slide in the oven with the casserole. Serve as a side dish with the Baked French Toast.
