Things Needed
potatoes (amount varies)
potato peeler
Butter or oil to fry the onions
Cooking Onions sliced (amount varies)
2-3 raw eggs (amount varies)
1. Buy a 3 lb bag of any cooking potatoes, Russet or Idaho potatoes will do. Buy more or less depending on serving sizes and how many will be eating. Put them into the sink and wash the skins of the potatoes. Place the wet potatoes onto a paper towel to absorb the water.
2. Use a potato peeler and start peeling the skin off the potatoes. This is a tiresome job so see if you can get some help. Set skinned potatoes into a pot of cold water to keep them from getting brown spots while you cut and dice each potato for your mashed potato pie.
3. Dice each peeled potato with a small sized sharp knife to make it faster to boil and cook. While waiting, take out a ceramic or metal pie plate to put the mashed potatoes in to bake for the pie like crust. The size of the pie plate is determined by how many potatoes you are using.
4. Spray the pie plate with olive oil and set aside. Slice the onions and put them into a large frying pan, along with oil or butter. Fry them on a low heat until they are caramelized - lightly fried a golden brown but not burned.
5 . Pour the boiled potatoes into a large colander or strainer and allow to stand a little bit to get rid of all the water. Put the potatoes into a large mixing bowl and mash them with a fork or use an electric mixer. Add butter, salt and pepper, cooked onions, raw eggs and mash until blended. Do not taste the mashed potatoes at this point because it is not healthy to ingest raw eggs. Taste for seasoning prior to adding the eggs. Add more seasoning depending on what is missing in the taste department.
Use a large spoon and put the mashed potatoes into the greased pie plate Use a fork to shape and form the top of the potatoes to look like a smooth topped pie.
To create a crust, put a clean hand under the cold running water in the sink and immediately pat the top of the mashed potatoes with the water from your hand. Do this a few times until the potatoes are smooth, and look shiny from the water. Bake about 2 or more hours at 325 degrees, or until you see the top of the potatoes brown, crusty and hot inside.
Use a pie server to cut the potato pie into servings and serve as a tasty and delicious side dish to the Turkey for Thanksgiving dinner.
