How to Bake Pumpkin Chocolate Chunk Cookies

This week I stumbled on to a sale on canned pumpkin. I know Thanksgiving is long past but I have developed a cookie recipe that I was aching to put the finishing touches on before I could share it with you. It is a simple recipe and makes some good cookies. (one bite size according to my eldest grandchild) Y'all gotta try these soon! Let's roll up our sleeves, take off our rings, wash our hands and get cooking.

Pumpkin Chocolate Chip Cookies

Ingredients

15 oz can pure pumpkin

1 cup butter flavored Crisco

1 cup dark brown sugar (firmly packed)

ΒΌ cup white sugar

2 large eggs (Chicken or one duck egg)

3 cups all purpose flour

1 Tablespoon Vanilla

1 Tablespoon cinnamon

1 teaspoon sea salt

1 teaspoon ground ginger

1 teaspoon ground nutmeg

1 bag Hershey's chocolate chunks

2 cups chopped California walnuts (Georgia pecans work too)

Directions:

Pre-heat oven to 350. In a stand mixer cream Crisco, dark brown sugar, white sugar, and pure pumpkin, add vanilla, add one egg at a time. In a separate bowl combine dry ingredients. Add slowly to wet ingredients till fully incorporated. Fold in Hershey's chocolate chunks and California walnuts by hand. Spoon cookies (1" ball about 1' apart) on to baking sheet and bake in preheated oven 15-20 min. Allow to cool 5 min on pan before removing to cooling station. I know it's tough but wait to taste till cool.

Notes:

The Queen Goddess loves these served with ice cold eggnog but will suffer with only Columbian coffee if necessary. The nuts maybe omitted if you have nut issues in the family. My grandson Mike tells me these would be better if iced with a fudge frosting. I feel that would be a bit over the top....you decide. Beware these little tidbits can become habit forming.

Make a plateful for your Minister, Priest, or Rabi. Take a plate full to the Emergency Room Nurses in your town...the Midnight shift will be the most needy. (tell 'em Bubba sent ya) Just please bake some today...remember giving homemade cookies is almost as special as receiving home baked cookies.
