Things You'll Need:
- 1 Whole chicken (4 pounder)

- 1 lemon

- 1 lime

- 1/2 cup honey

- 1 cup water

- 1 cup pineapple juice

- 1/2 cup chopped pineapple pieces

- 2 tsp seasoning salt

- 2 tbsp margarine
-
- large Chinese pot

- baking pan
Step 1: I love to wash meat products in lemon juice; it's a great way to clean any kind of meat.
If the chicken is frozen, halve a deep pot with cold water. Then pour 3 tablespoons of salt and 1/2 cup lemon juice in water. Place frozen chicken in the pot and let it marinate in the salt and lemon solution for about 1 to 3 hours. After about 1 to 3 hours, pour off lemon and salt solution and rinse chicken. Then place in baking pan and set aside.
Step 2: In a medium bowl add 1 cup water, 1 freshly squeezed lemon juice, 1 freshly squeezed lime juice, 1 cup pineapple juice, 1/2 cup honey, and stir until mixture is uniformed.
Step 3: Melt 2 tablespoons margarine in pan. Then season chicken on the outside and the inside with seasoning salt and melted margarine.
Step 4: Peel one potato and cut into long slices and place in the bottom of baking pan with pineapple citrus sauce, pineapple cubes, and potato pieces.
Step 5: Stuffing is optional:
Pre-heat frying-pan on medium heat. Meanwhile, season the ground meat with seasoning salt, a pinch of black pepper, chopped onions and 2 cloves of garlic. Then put seasoned meat in frying pan and cook. Stir constantly to avoid lumping. Do not over cook. Remove frying pan from stove after 8 to 10 minutes while ground meat is medium done, and set aside.
Step 6: Combine ground meat and prepared stuffing mix. Mix until uniform.
Step 7: In the meantime preheat oven at 350 degrees.
Step 8: Then stuff the inside and top of chicken with prepared stuffing. Then cover turkey with foil or lid and let it bake for 45 minutes. Then remove lid and let chicken continue to bake for another 30 minutes. During which time, intermittently pour sauce in the bottom of the pan over chicken.
Step 9: After 30 minutes, remove chicken from oven and let cool for 10 minutes. Then serve. Bonne appetite!
TIPS:
1. I like the chicken to be really brown and toasty on top, because it gives that roasted look, and the skin just falls off.
2. It's good to not only clean the chicken in lemon juice and water solution but to also marinate it because it makes the meat tender.
