Banana Nut Bread
1 ¾ cups of all-purpose flour
2 tsp of baking powder
¼ tsp of baking soda
½ tsp of salt
1 cup of sugar
½ cup of chopped pecans or walnuts
2 eggs
1 cup of mashed bananas
½ cup of vegetable oil
Mix together flour, baking powder, baking soda, salt, and sugar. Make sure this is mixed together before adding your wet ingredients. Next add your eggs, bananas, nuts, oil, and vanilla. Stir until they are combined well. Preheat your oven to 350 degrees Fahrenheit and grease two 8 X 4 inch loaf pans. Pour the batter into your pans and then bake them for 45 to 60 minutes. I suggest testing them with a toothpick to ensure they are baked through. Cool on wire racks for 10 minutes and then remove from the pans.

Sour Cream Banana Bread
¾ cup of butter
3 ¼ cups of sugar
3 eggs
6 ripe bananas, mashed
1 (16 oz) tub of sour cream
2 tsp of vanilla
3 tsp of ground cinnamon
½ tsp of salt
3 tsp of baking soda
4 ½ cups of all-purpose flour
1 cup of chopped walnuts
In a medium to large bowl cream the butter into 3 cups of the sugar. Remember to set aside the other ¼ cup of sugar for the pans later. Mix in the eggs, mashed bananas, sour cream, vanilla, and 2 teaspoons of the cinnamon. The other teaspoon of cinnamon will be used for the pans so you can mix it with the leftover sugar. In a different bowl, mix together the salt, baking soda, and flour. When you have the dry ingredients mixed together well, stir them into the wet mixture. Combine everything together well and then fold in your walnuts. Now you need to prepare your pans. Remember the cinnamon and sugar you saved back. You need to mix them together and then Grease four 7 X 3 inch loaf pans. Then dust the pans with the cinnamon sugar mixture. Preheat your oven to 300 degrees Fahrenheit and bake for 1 hour. Make sure you do the toothpick test to ensure the loaves are baked through.

Chocolate Chip Banana Nut Bread
1 cup of shortening
2 cups of sugar
2 eggs
2 Tbsp of mayonnaise
6 ripe bananas, mashed
3 cups of all-purpose flour
½ tsp of salt
1 tsp of baking powder
2 tsp of baking soda
1 cup of chocolate chips
½ cup of chopped walnuts
In a large mixing bowl cream the shortening and sugar together until they are light and fluffy. Stir in the eggs one at a time and make sure to beat well after each one is added. Next, stir in the bananas and mayonnaise. Then in a separate bowl combine the flour, salt, baking powder, and baking soda. Make sure they are blended together well. Then slowly blend the dry mixture into the banana mixture. Stir just until everything is combined evenly. Then you need to fold in your chocolate chips and walnuts. Preheat the oven to 350 degrees Fahrenheit and grease two 9 X 5 inch loaf pans. Bake the loaves at 350 degrees for about 50 to 1 hour and 15 minutes. You will need to do the toothpick test to ensure the loaves are baked through. Cool each pan for 20 minutes and then remove to racks to cool completely.

Peanut Butter Banana Bread
½ cup of softened butter
1 cup of sugar
2 eggs
½ cup of peanut butter
2 mashed bananas
2 cups of all-purpose flour
1 tsp of baking soda
½ cup of walnuts
In a mixing bowl cream the butter and sugar together. You will then add eggs and beat the mixture well. Stir in the peanut butter and bananas. In a separate bowl mix together the flour and baking soda and then stir it into the wet mixture. Fold in your walnuts and then poured into a greased 9 X 5 inch loaf pan. Bake in a preheated 325 degrees Fahrenheit oven for 70 minutes. Do the toothpick test to ensure the bread is done. Remove immediately to a wire rack to cool completely.
Maple syrup gives this next recipe a mouthwatering taste.
Maple Banana Nut Bread
½ cup of melted butter
½ cup of maple syrup
1 egg
2 ripe bananas
3 Tbsp milk
2 cups of all-purpose flour
1 tsp of baking soda
½ tsp of baking powder
¼ cup of chopped walnuts
3 Tbsp of sugar
In a medium to large sized mixing bowl stir together the melted butter and maple syrup. Beat in the egg and bananas making sure to leave a few small chunks of banana. Stir in the milk. In a separate bowl mix the flour, baking soda, and baking powder together. Then stir in the powder mixture into the banana mixture just until it is moist. Grease a 9 X 5 inch loaf pan and then pour the mixture into the pan. Preheat the oven to 350 degrees Fahrenheit and bake for 50 minutes. Make sure to do the toothpick test to ensure it is done.
As you can see there are many variations to the ordinary banana nut bread. Explore your own preferences and you can come up with more variations to please your tastes. Make the recipes your own and they will be even better. Just as we are all unique, we all have unique favorites.
