How to Make BBQ Beef Rib Stew

Last month I was challenged with a unique leftover. My kids had done BBQ Beef ribs and several couples were a no show to the party. They wanted me to "fix it Dad" So I put my thinking cap on and made a delightful stew. It was soo good my daughter has declared next party she will cook extra beef ribs so Dad can make more stew. This is a two day cooking recipe and would work for any bones and meat leftovers. If you want BBQ flavor just add some BBQ sauce.

BBQ Beef Stew

Ingredients:

6-7 left over BBQ Beef Ribs

½ jar BBQ sauce (optional)

¼+ cup Worcestershire sauce

6-7 beef bullion cubes

¼+ cup sugar (basic white sugar)

¼ cup garlic powder (more if you dare)

water to cover

! softball sized onion diced

1 bell pepper diced (use whatever color you have)

2 carrots grated

1 cup celery fine diced

2 pounds frozen mixed vegetables (whatever your family prefers)

1 8oz can sliced mushrooms (stems and pieces work)

1 15oz can diced tomatoes

12 oz black leftover coffee

½ cup long grain rice

Directions:

Put ribs, Optional BBQ Sauce, Worcestershire sauce, bullion, garlic powder in pan with enough water to cover it. Bring to a rolling boil, cover and reduce heat to a simmer. Simmer 3-4 hours. Remove bones and visible fat from pan, dice meat and return that to pan, cover. Refrigerate till morning of day two. Take the layer of fat off top of pan and discard. Add all remaining ingredients and bring to a boil. Cover and reduce heat to simmer 30 minuets. Serve or will hold hot for several hours. You may add water to thin the sauce if necessary.

Beef ribs are exceptionally meaty. You might enjoy using some stew meat instead and double the BBQ sauce for the same flavors.
