Brunch buffet are a special place to party. Everyone I know loves bacon. I know it is only on a special occasion that I allow myself the treat of Bubba's Bacon Pie This is a delightful simple brunch Bacon Pie that will knock your socks off. It is a one skillet meal that is simple to prepare and on the table in under an hour. I know folks that won't believe this is a pie but let 'em taste this and they will be believers. Y'all know every buffet needs fruit so we're baking Green Tomato Pie. We also never have enough chocolate. Today we make Bubba's Dark Chocolate Pie. Someone put on a fresh pot of Columbian Coffee. We all will roll up our sleeves, take off our rings, wash our hands and make Bubba's imposible bacon pie.

Bubba's Imposible Bacon Pie

Ingredients:

1 pound Deli bacon browned and crumbled

1 softball sized onion fine diced

2 cups (8oz) shredded cheese (Your favorite, I like Pepper Jack)

5 large chicken eggs (4 duck eggs)

2 cups buttermilk (sub 2 cups whole milk with 2 Tablespoons lemon juice)

1 ¼ cup baking mix (Bisquick)

1 teaspoon black Pepper

1 Tablespoon Garlic Powder (Not Garlic salt)

Directions:

Preheat oven 425. In a 12" oven proof skillet (cast iron) brown bacon and remove saute onions in bacon grease. Return bacon to skillet with onions add cheese. In a bowl whip eggs and buttermilk. Add baking mix, Garlic Powder, and Pepper.. Pour egg & milk mixture over bacon, onions, and cheese.. Bake 40-45 min.

Bubba's Dark Chocolate Pie

Ingredients:

9" Oreo Pie crust

2- 4 serving size sugar free low calorie Instant Chocolate pudding (Your Favorite brand)

1- 16oz whipped topping (Cool Whip)

2-3 Tablespoons Chocolate Syrup (Hershey's)

2 ½ cups Buttermilk

1 cup cold Columbian Coffee (black and strong)

Chocolate sprinkles

Directions:

Whip Instant Chocolate pudding, Columbian Coffee, and Buttermilk together and pour into Oreo Crust. Fold Chocolate Syrup into Whipped Topping and top the chocolate pudding mixture. Enhance the top with Chocolate sprinkles. Chill 1-2 hours before serving. Best cut in 8....maybe 4...Oh heck hand me a fork...

Note:

You may substitute cold Espresso for the cold Columbian Coffee.

Bubba's Deep Dish Green Tomato Pie

Ingredients:

5-6 Cups green tomatoes washed, diced 1"

1+ Tablespoon lemon extract

1 1/2 cups sugar (Splenda works fine)

2 Tablespoon Instant Tapioca

1 teaspoon Nutmeg

Double pie crust (Store bought works)

Directions:

Preheat oven 425. Mix sugar, salt, nutmeg, instant tapioca, set aside. Gently place bottom crust into pie dish. Place diced green tomates in crust, drizzle lemon extract over tomatoes, sprinkle sugar mix over this and gently place top crust over this. crimp edges and cut a "B" in the top for Bubba. Bake @ 425 for 15 min, lower heat to 350 and bake an additional 45 min. Allow to cool for 20 min or more before slicing.
