How to Make Bubba's Buffalo Dip

It doesn't matter if you're having a party or just the neighbors over a warm dip is always appreciated. The Buffalo Wings have created a craze in spicy cheesy dishes with chicken enhancement. This dip does make a 9x13 casserole. It also will reheat the second day for a lunch enhancement...or if you're like me for lunch period. Beware this is not a low fat, low calorie snack., It is robust in flavor and will satisfy that special need for spicy and warm comfort food. Someone please put on a fresh pot of Columbian coffee. We all need to roll up our sleeves, take off our rings, wash our hands, and get cooking

Bubba's Buffalo Dip

Ingredients:

2 pounds shredded cooked chicken or turkey (leftovers work well)

12oz Louisiana hot sauce (your favorite brand)

16oz Cream Cheese (room temp)

16oz bottle Blue Cheese salad dressing (your Favorite brand)

1 cup fine chopped celery

½ cup fine chopped red bell pepper

2 Tablespoons Worcestershire Sauce

1 Tablespoon Garlic Powder

1 teaspoon Kosher Salt

1 teaspoon black pepper

12oz shredded Co-Jack cheese 3 cups (I like Pepper-Jack for a bit spicier)

Directions:

Preheat oven to 375. Mix chicken and Louisiana Hot Sauce press into a greased 9x13 baking dish. Mix room temp cream cheese, blue cheese salad dressing, celery, red bell pepper, Worcestershire sauce, garlic powder, Kosher salt, black pepper and spread over chicken mixture. Bake 20 min in preheated 375 oven Sprinkle 12oz of cheese evenly over entire dish and return to oven for additional 20 min. Serve with sturdy chips such as Pita Chips, Scoops, the "spade" end of the celery, carrot planks. Best if served with an iced cold beverage and good friends.

Note:

If you don't have leftover chicken or turkey boil 2 pounds boneless skinless chicken breasts or thighs ands shred with two forks. If you're not a blue cheese fan substitute ranch dressing. Don't be afraid of the Louisiana Hot Sauce the huge amount of cheese takes most of the heat out of the dish. Wanna make it Vegetarian? Sub shredded cabbage for the shredded chicken.
