How to Make Bubba's Pasta with Tomato Gratan

Every workin' guy & gal needs a special quick dish to pull out when the day is too long and the emotions are screaming "I need comfort food tonight" This is a simple dish that takes only a wee bit of preparation. It does feel good and tastes great hot or room temp. Bubba's Pasta with Tomato Gratan will fill all those comfort food needs. Comfort food that taste good and isn't loaded with extra calories is a bit unique. Comfort food makes a week night meal extra special. This dish travels well so even warm @ the church potluck makes it a workin' gal or guys ace in the hole. Y'all better roll up your sleeves, take off your rings, wash your hands and join me in makin' comfort food.

Bubba's Pasta with Tomato Gratan

Ingredients:

4+ cups cherry or grape tomatoes washed and halved (for color use red and yellow tomatoes)

¼ cup capers (drained)

1 softball sized onion diced

½ cup bread crumbs (Italian)

1 teaspoon ground nutmeg

1 Tablespoon chopped garlic

olive oil

course salt

black pepper

Parmesan or Romano cheese (Green Box stuff is OK)

1 pound your favorite tube pasta (Zitti Penne, Mostecalli, etc)

Direction:

Put a pot of water on stove to boil. Preheat oven to 425. In a 9 x 9 greased pan place tomatoes, onions, garlic, capers season with salt, nutmeg, and pepper toss with 2-3 tablespoons olive oil spread evenly and top with bread crumbs. Drizzle with olive oil bake 30 min. Drop pasta about 20 min later. When pasta is done drain (reserve 1 cup pasta water) and place in deep bowl toss with 1½ cup Parmesan cheese. Remove tomato mixture from oven and toss with cheese covered pasta. (if too thick add the reserved pasta water) Drizzle a bit more olive oil and about a half cup of parmesan cheese...toss just before serving. A crusty bread and an ice cold tossed green salad is the perfect enhancement for this comfort food meal.

Note:

It is important to toss pasta with cheese before adding tomato gratan.
