How to Make Bubba's Tuna Salad

I was in one of those moods when I needed to experiment. I wanted to serve a cold tuna salad sandwich but was tired of the traditional mayo based sandwich. First step was look in the pantry for what ingredients I have... The results are tremendous. Y'all roll up your sleeves, take off your rings, wash your hands and let's get cooking...

Bubba's Different Tuna Salad Sandwich

Ingredients:

2 -5oz cans tuna drained (Your favorite)

1 can quartered artichoke hearts drained (California)

1 cup salad olives (California)

1 green onion fine diced (both white and green part)

1 can of Garbanzo beans drained

3-4+ cloves garlic (Gilroy California is the best)

3 Tablespoons Lemon juice

2-3 Tablespoons dry parsley flakes

ΒΌ cup extra virgin olive oil (California is the best)

Your favorite crusty roll

fresh spinach

spicy brown mustard

salt and pepper

Directions:

In a large bowl mix tuna, artichoke hearts, olives, pinch of salt, and green onion. Set aside. In a food processor put garbanzo beans, garlic. Lemon juice, dry parsley flakes, salt, pepper and olive oil. Pulse till you have a course puree. Add tuna mixture and pulse again. You want it a bit chunky so don't over do it. Slit your favorite crusty roll and cover the bottom with fresh spinach leaves. Spread spicy brown mustard on top. Layer tuna puree on top of spinach bead close sandwich and prepare yourself for a great sandwich.

Notes:

The Queen Goddess has determined this would be much better with a bit of sharp cheese. Oliver (My youngest grandchild) claims Mozzarella is better than a sharp cheese. I'll leave that debate for another day.

Interesting substitutions. Substitute salmon, turkey, or chicken for the tuna. Substitute diced Kalamata olives for the salad olives. Add a hand full of sunflower nuts just for some added crunch.
