How to Make Chicken Cacciatore

Making Dinner for Your Date

I have a recipe that I love to make and it gets rave reviews from all of my family and friends. It's not a hard recipe, though it is a little time consuming depending on how many fresh vegetables you use. It is a great recipe for a dinner date or surprising your significant other with a home cooked meal.

Ingredients

1 lb boneless, skinless chicken breast, cut into cubes or very thin strips

Olive Oil

1 cup onions, diced

1 cup sweet peppers, diced

1 cup mushrooms

1 tsp flour

¼ cup dry sherry

½ cup chicken broth

1 cup tomatoes, diced

Spices

Pasta, enough for four

Cheese, sprinkle to taste

Directions

Cook chicken in olive oil to taste. I personally like the taste of chicken cooked in olive oil, so I may use a little more than most. Make sure the chicken is cooked thoroughly. Once done, drain the chicken, saving the juices to cook the onions, peppers and mushrooms.

Dice one cup each of peppers, onions and mushrooms. You can use any sweet pepper you want, depending on your taste and pocketbook. I prefer red peppers as they are sweeter than green and yellow. Unfortunately, they are 2-3 times more expensive. You can also drop these ingredients as needed. The last time I made this dish, I couldn't afford the red peppers and the green peppers looked like crap. I dropped the green peppers from the recipe!

Cook them in the left over olive oil and chicken juice; add a couple of chicken broth as needed. I use enough olive oil that I don't need to add anything.

Once everything cooks down, add your flour to thicken the liquid. If you are like me and have a ton of liquid left you may need more than 1 tsp of flour. Be careful though, if you add to much flour then the flavor change and it make the dish taste a little floury, so no more than 2 tsp of flour.

Add the rest of the broth and the sherry. Let everything simmer for a few minute to cook down some of the new liquid.

Once everything has cooked down, add your tomatoes. I usually use can tomatoes because I hate cutting up tomatoes as they are really messy! Drain the juice before pouring the tomatoes into the pot. This is true for all canned/bottled vegetables.

Add the spices to your taste, usually a ½ tsp of each. I like thyme and oregano, but that is me!

Now, add your chicken cubes back into the pot, turn the heat down to simmer and cover the pan. Let simmer for 30 minutes.

Cook your pasta. This dish should feed four people so cook enough pasta for four. This dish also has one serving of fruits and vegetables.

Serve. Sprinkle cheese on top for added flavor!

This is one of my favorite dishes to cook on the weekend. As I'm only trying to feed two people, I usually have enough to take for lunch the following week. Just heat it up in the microwave and you have a nice lunch!
