How to Make Chicken Curry

I like all kinds of curry, from the Indian style curry to Asian curry; however the Jamaican style curry chicken is my most favorite. In this article I am going to share with you my mom's curry recipe. It has also become the favorite of all our friends and families alike. Over the years I have written this recipe out to a listless amount of people. It is a really great recipe.

Things You'll Need:

  • Ingredients

  • 2 tbsp Jamaican style curry

  • 1 medium-sized onion (sliced)

  • 2 carrots (chopped)

  • 3 chicken legs and thighs (cut up)

  • ( one can also substitute 4 chicken breast for thighs)

  • large sauce pan

  • 1 tbsp seasoning salt

  • 1/4 tsp black pepper (optional)

  • 2 pieces or pegs of garlic

  • 5 tbsp olive oil

  • wooden spoon

Instructions:

Step 1: I like to wash my chicken in lemon juice, because it is a really great way to clean any type of meat product. After washing the chicken thoroughly; chop each leg and thigh into four pieces. However, that is also optional.

Step 2: After cutting up the chicken legs and thighs into smaller pieces; season it with black pepper, curry and seasoning salt. Then stir until the entire bowl of chicken turns yellow.

Step 3: Put sauce pan on the stove and preheat on medium-high heat. After about 5 minutes pour 5 tablespoons olive oil in the pan and then place each individual piece of chicken on the bottom of the pan. Then let them precook or brown for about 10 to 15 minutes.

Step 4: Then slice the onion, carrots and garlic and set aside.

Step 5: After the chicken has browned, stir it and then add carrots, garlic, onions and stir once more. Immediately pour 2 to 3 cups of water and turn stove on medium heat and cook.

Step 6: Let the chicken curry cook for an hour and a half or until the onions have melted and the sauce has thickened. Then remove from stove and serve.

Tips & Warnings:

1. Carrots are optional, however it does add to the taste.

2. You can substitute chopped potatoes for carrots or do both.

3. Do not stir chicken with hand once curry's been added, because your hand (s) will turn yellow for a few days.
