Chicken Fried Steak
Ingredients:
4-6 pieces cube steak
2 cups buttermilk
2 chicken eggs
2 cups all purpose flour
1 Tablespoon salt
1 Tablespoon black pepper
1 Tablespoon garlic powder (not garlic salt)
1 Tablespoon chili powder
Lard fer fryin' (substitute shortening)
Directions:
Mix all purpose flour, salt, pepper, garlic powder, and chili powder in a flat open dish set aside. Mix eggs and buttermilk in a flat open dish and set aside. Dip cube steak in flour mix, then the buttermilk mix and back into the flour place on a rack. Place rack in pan and slide into refrigerator 30-45 min. Heat heavy bottom deep skillet up with ½ cup or more lard add steak and fry till golden brown. Serve with country gravy recipe below.
Country Gravy
Ingredients
½ cup lard (substitute butter)
½ cup all purpose flour
2 cups buttermilk
2 cups chicken stock
1 tablespoon black pepper
tabasco to taste
Directions:
Melt lard and add flour, brown till the color of coffee with cream. Slowly add and stir chicken stock then milk. Stir till this boils. Add black pepper and tabasco. Serve generously over chicken fried steak and the Country Fried Taters recipe below..
Country Fried Taters
Ingredients
3-4 red taters diced (do not peel)
2 Tablespoons Garlic powder
1 tablespoon black pepper
½ cup green peppers diced
1 softball sized onion diced
6 slices deli bacon diced
Directions
Begin bacon in cold skillet. Turn burner to Med-Hi As bacon begins to render it's fat add the remaining ingredients, cover and wait 7 min. Stir and cover waiting 7 min. Stir third time cover and wait 7 min. serve with the above or any other meal.
