How to Make Chili Rice

There are days when I want a casserole meal with a wee bit of zip. This is an easy recipe that will satisfy those emotional needs. It does have more than a few ingredients but don't allow that to overwhelm you. The recipe does call for Bacon and Ground Beef you could easily substitute Turkey Bacon and Ground Turkey if that conforms to your diet. Someone please put on a fresh pot of Columbian Coffee, we're all gonna roll up our sleeves, take off our rings, wash our hands and get cooking.

Juanita's Chili Rice

Ingredients:

1-2 Tablespoon cooking oil (your favorite)

1 Tablespoon Chili Powder

1 Tablespoon ground Cumin

1 Tablespoon Black Pepper

2-3 slices thick cut deli bacon diced

1 Cup celery diced

2 Red Bell Peppers seeded and diced

1 Jalapeno Pepper seeded and fine diced (optional)

1 softball sized onion fine diced

4-5 cloves garlic diced

6oz can Tomato Paste

1 pound lean Ground Beef (80/20 or leaner)

15 oz can diced tomatoes

2 Cup long grain rice

4 cups Beef Stock (low sodium)

15 oz can Black Beans drained and rinsed

15oz can Whole Kernel Corn drained and rinsed

Directions

Place oil, Chili Powder, Cumin, Black Pepper, bacon, diced celery, red peppers, jalapeno pepper, tomato paste, onion, and garlic in heavy bottom deep pan (Dutch oven) saute on Med-High heat till vegetables are beginning to soften add Ground Beef breaking it apart as it browns. Add rice and stir until it has all been coated with the juices in the pan. Add the black beans, corn, tomatoes, and Beef Stock, bring to a boil, cover and lower heat to Med-Low and do not peek for 25 min. Stir well before serving.

Note:

This can be used for a side dish or the center of the plate you choose. I served this with a huge field green salad and a loaf of crusty black bread and received many compliments.

My son Goliath is a chili connoisseur. He claims you must have smooth Jiff peanut butter on soft white bread with anything Chili.... even cheesy chili-mac
