How to Make a Coconut Pie that Makes Its Own Crust!

We all love pies, but some of us are intimidated by making a pie crust. Store-bought pie crusts are OK, but not so great, and they add to the cost of the dessert. Here's a recipe to make a Coconut pie that makes it own crust! You just mix it up, quick and easy, and throw it in a greased pie pan or other dish, and you have pie!

This dish is elegantly simple, kind of like cheesecake. You could add whipped cream to the top, if you wanted to dress it up a little. The addition of fruit would be a nice touch, too. Cherries would be especially good.

You probably have most of these ingredients in your pantry, with the exception of the coconut, which makes for an economical dessert.

Ingredients:

Bisquick type baking mix, I always use the cheaper mix: 1/2 cup

Milk: 2 cups

Margarine or butter: 1 stick of butter

Eggs: 4

Sugar: 3/4 cup

Coconut: 1 Cup

Vanilla: 1 teaspoon

Instructions:

Preheat oven to 350 degrees.

Grease whatever pan you have to use. If you have a foil pie pan or round pan that size, it is best. I used a deeper pie pan. You will have enough batter, probably for two more shallow pans.

Mix all ingredients except coconut, and stir well. You can use a blender or mixer, if desired. I just quickly stir by hand.

After you have it fairly smooth, add the coconut, reserving just enough to sprinkle over the top, if you want to. Mix well. Bake for 30 to 40 minutes.
