Batter
1 cup flour
1 teaspoon salt
½ teaspoon sugar
1 teaspoon dill weed
3 eggs, separated
½ teaspoon olive oil
½ cup beer
2 tablespoons water
In a bowl, combine flour, salt, sugar and dill weed. Make a well in the dry ingredients. Add the egg yolks and liquids. Blend well. Beat the egg whites until stiff, then fold into the batter.
Vegetables
Two 8 ounce cans artichoke hearts, drained and sliced in half
1 large head cauliflower, in bite size buds
3 large zucchini, in 1 inch slices
Flour
Salt
Preheat oil for deep frying to 375°. Coat the vegetables with flour and shake off excess. Dip the vegetable pieces in the batter and fry until golden brown. Drain on unglazed brown paper. Salt gently
