How to Cook Jerk BBQ Tofu

Omnivores oftentimes don't crave tofu, but they do crave BBQ. Vegetarians and vegans regularly try to find new ways to prepare tofu. This recipe gives the texture of chicken, the spiciness of jerk food, the healthy feel of soybeans, and the sweet homemade taste of BBQ.

Ingredients:
* 14 oz. extra firm tofu
* Chopped onion flakes
* Caribbean jerk seasoning
* Ground (cayenne) red pepper
* Cilantro leaves
* Seasoned salt
* Ground lemon pepper
* Ground black pepper
* BBQ sauce (preferably honey BBQ sauce (Great Value) or Kraft original BBQ sauce

Directions:

Step 1: Freeze extra firm tofu if you want the chewy texture of chicken. Defrost the same way that meat is defrosted, preferably by putting it in the refrigerator a day before use instead of the microwave, which will dry it out a little too much.

Step 2: Lay tofu out on a paper towel and softly squeeze the excess water out. Many tofu cookbooks recommend putting a book or a heavy object over the tofu to squeeze water out, but frozen tofu tends to crumble when this is done. It's okay to do it with refrigerated tofu though.

Step 3: Slice the tofu into long squares and then cut each square into four long rectangles to make about 30-40 strips.

Step 4: Cover 1-2 nonstick pans with aluminum foil.

Step 5: Lay tofu out a few centimeters apart to avoid them sticking together.

Step 6: Sprinkle seasoning on both sides of tofu, then pour BBQ sauce on both sides. Using a spoon or a sauce brush helps spread the BBQ sauce evenly.

Step 7: Sit tofu in refrigerator so the seasonings and BBQ sauce will marinate.

Step 8: Set oven temperature at 400 degrees, and insert tofu pans.

Step 9: Flip tofu once or twice in a half hour period. Cook until brown. Serve immediately.
