How to Cook Souvalki

To eat like a Greek try my Mom's recipe for Souvalki. Souvalki is skewered meat that has been marinated and grilled. When we make Souvalki, we enhance the basic recipe to include our favorites; we make it a whole meal.

Souvalki is very easy to prepare

2 lbs of meat, you can choose beef, lamb or pork as to your own taste, I use beef in our souvalki, many of my friends like the lamb and others enjoy the pork, but for me it is the beef. Cut the meat, your choice into cubes approximately 1/2 inch in thickness and set aside in a bowl.

1 tablespoon of oregano

1 teaspoon of salt

1 teaspoon of pepper

1 package cherry tomatoes

1 Vidalia onion

1 Green Bell Pepper

2 tablespoons of red wine, if you don't have red wine you can substitute red vinegar

In a bowl mix the red wine (or vinegar) oregano, salt, pepper and meat, cover the dish and refrigerate it for around an hour to marinate the meat.

You will need six to eight skewers, if you choose to grill outside then I would suggest metal skewers if you intend to cook indoors then I would suggest the wooden skewers, be sure that you have washed the skewers before you use them.

Cut the Green Pepper, take the top off, core the center and dispose of the seeds, cut the pepper so that you have sufficient pepper to stay on the skewer around a quarter of on inch.

Take the skin of the Vidalia onion, cut it in wedges so that it can become part of the skewer.

Wash the cherry tomatoes and set them aside

Take the meat out of the refrigerator; you are ready to assemble your souvalki. Push a piece of meat, tomato, pepper and onion and repeat until the skewer is full. Whatever juices are left over in the bowl take a brush and wipe them onto the finished skewer. All you have to do now is grill the skewers to your preferred tenderness. I like mine well done so I keep them on around fifteen minutes and I turn the once or twice while they are cooking.

If we are eating them indoors I will usually make steamed rice to go along with the meal and have a glass of wine to top off the meal. Eat Greek.
