Cake Mix Cookies:
For these delicious and light cookies, all you need is ½ cup of oil, two eggs and the box of cake mix of your choice. It is honestly that simple. Preheat the oven to 350 degrees F. Mix the oil, eggs, and cake mix together. You want the texture to be wet but firm. If you follow the directions on the cake box, it will not be suitable to shape into cookies. Once it is mixed, roll into small balls and place on a baking sheet. Pop them into the oven for 10 minutes and bam - a cookie! If you have some frosting on hand, try frosting them once they are cool. If you do this, they will taste best once the frosting has hardened a little bit and the cookie cooled completely. It tastes like a little piece of cake with the right balance of frosting and dough. There are so many cake mixes and frostings out there that this is fun to experiment. Just imagine cinnamon cookies with cream cheese frosting, lemon cake cookies with chocolate frosting - the possibilities are almost endless!
Brownie Cookies:
Another really good cookie to make is one from brownie mix. I love brownies and cookies, so I could eat them interchangeably. What I really love about making brownie cookies is that you get the taste of the brownie in a lot less time. Usually a brownie takes 40 minutes or more to bake. That is not including the prep time or the cooling time. That is a long time to wait to satisfy your sweet tooth. All you need for these cookies is one package of brownie mix, 1 egg, 2 tablespoons of water, and 1/3 cup of oil. Like I said for the cake cookies, if you make the brownies like that package says, then they will be too thin and runny to make cookies. Now, preheat the oven for 375 degrees F. Mix the four ingredients together. Feel free to add chopped nuts or chocolate chips. Place on a greased cookie sheet and bake them for eight minutes. Eight minutes is a great improvement from 40!

People sure do complain a lot, don't they? That's why I always include disclaimers regarding temperature and time. Every oven is different! Also, if cookies turn out flat, chances are the oven was not preheated before they were baked.

I made the brownie mix cookies today and they were the best cookies I have EVER had!! I used Ghirardelli double chocolate brownie mix using one package and followed the recipe above exactly and they were PERFECT! Well, I made one minor change that doesn't necessarily matter. I used parchment paper on my cookie sheet instead of greasing it. Oh and for anyone who wasn't entirely sure of EXACTLY what to do(and I wasn't either), here's how I did it: I mixed the ingredients together until well combined. Then, I rolled them into 1" balls and place them approximately 1" apart on the parchment paper lined cookie sheet. Baked at 375 for 8 minutes. After cooling a few minutes, they were stiff enough to hold but still gooey but not TOO gooey and just PERFECT! Thanks for sharing and I hope everyone else loves them as much as we did! We're trying cake mix cookies tomorrow!
half a cup of oil is too much and the temperature of the oven should have been more like 375 they came out flat and way to gooey even after cooking them for along time
