Color and Size of the Candy Bar Matters
Before you start to purchase the candy, its best to plan the color theme and decide on the amount of candy you will need. I believe cost is just as important as the overall look of the candy buffet. For an inviting and grand look, having a monochromatic theme works best for a candy bar. Many bulk suppliers will let you purchase wholesale orders of things like jelly beans - all in one color. Pick one or two colors and try to purchase different shades of candy within those colors.
Next, decide on the amount of candy you will need for a reasonable size table. You do not want to be left with pounds of candy and unnecessary expenses especially when planning a wedding. I figured 5 to 8 ounces per guest. However, this is not a set rule. The amount needed will depend on the type of guests who will be attending your event - kids vs. adults. Something else to consider is if additional desserts will be served. Serving too many sweets throughout the event will be an over kill. It is safe to start out with less than 8 ounces per guest.
Buying Candy in Bulk
The candy of course is the most expensive aspect for the candy buffet but there are ways to control costs as well. The best option for purchasing candy is buying in bulk. There are plenty of online candy stores that sell at wholesale pricing. Also keep an eye out for sales during holiday seasons such as Halloween, Easter, or Christmas. If your color theme is red, check your local grocery stores or Walgreens right after Christmas. Easter is also a perfect time to get pastel colored candy for very cheap. The most popular candy for a candy table is jelly beans, candy canes, lollipops, licorice, and M&M's. All of these can be found in many different colors.
Table Set-Up and Designing a Candy Buffet
Make sure presentation is top notch with large glass bowls and vases. Fill larger containers with the less expensive candies, smaller containers for the more expensive containers. If you can not find containers in your own home, stores like Ross, Dollar Stores, and Thrift Stores carry different shapes and sizes for a very reasonable price. Large martini glasses look fabulous amongst all the different sizes. Depending on the type of table you use, a floor style table cloth with runners will make the entire buffet stand out. Place each vase and bowl randomly on the table. Another idea is to add a thin ribbon around each vase.
Additional Details
Silver scoops will add a very elegant yet festive look to the candy bar. Clear cellophane bags and ties are another added feature to any candy bar because guests need something to put all their goodies in. You can also use tins or chinese take out boxes. This allows guests to take a small favor home to remember your special day. On the side of the table, a greeting with instructions will add a personal touch. The message could read, "Welcome to the Sweet Shoppe" or "Get a bag, Fill it up, and Enjoy!" Frames could also be added with a menu of the items available.

I had my daughter's wedding last month in Houston and she really wanted her candy buffet to be a huge highlight of the reception. We decided to use a Candy Buffet company named Sugar Bunch Creations (www.sugarbunchcandybuffets.com). They come up with the most elegant design for her candy buffet and we even added edible party favors like custom personal packaged cupcakes and brownies. We gave our wedding colors and they found the most beautiful colors of ribbons to accent the containers. I would not think twice about uses them.
