How to Create a Healthier Butter-Like Soft Spread

Eva Belen
I recently discovered a great way to make a butter-based soft spread. It's healthier than margarine, and less fattening than all-out butter. Nina Planck, author of Real Food, offers this easy, healthy alternative to the hydrogenated margarines currently dominating the food market.

Ingredients:

Use equal portions of butter and olive oil. One stick of butter equals 1/2 cup. If you use two sticks of butter, then you must use 1 cup of olive oil.

One stick (equals 1/2 cup) Organic Butter (salt free)
One 1/2 cup Organic Extra Virgin Olive Oil

1) Allow butter to soften at room temperature.
2) Once butter is softened, place it into a small plastic or glass container (that has a sealable top), and add the olive oil.
3) Mix thoroughly until smooth and creamy.

For extra taste, just add a pinch of Sea Salt.

You now have the healthiest soft spread money can buy! Keep the spread in the refrigerator so it stays fresh.
