Approximate serving: 45 egg rolls
You can find this at your local oriental market: Egg roll wraps, taro, rice noodles you might even try Winco or a grocery store that sells ethnic foods.
Preparation
1- Peel the carrot and taro than use a grater to grate into separate bowls
2- Boil the rice noodles
3- Set up the table for wrapping
4- Warm up the wok or pot
5- Pour a cup of oil into the wok or pot
6- Peel and crush garlic than add into wok or pot
7- Stir it around until it turns a little brown than throw it away
8- Add in the ground beef
Mix the ground beef around until it turns gray or brown when it is near cooked you want add the salt and sugar. You can try a teaspoon of salt and teaspoon or more of sugar. After it has cooked you want to test it for the flavor than throw in the rice noodles and mix it together. You want to keep testing it for the flavor and than throw in the carrots and taro root. Mix it together until the carrot and taro root has turned soft and the beef is cooked. You can feel free to add some more salt or sugar to make sure there is enough flavor. After it is done you want to put it into a separate bowl. The next step is to wrap the eggrolls.
Wrapping an eggroll
1. Take the wrap and place it on a plate so that one of the sharp corners points to you.
2. Use a spoon to scoop up the mixed ingredients and place it where the corner would make a triangle.
3. Take the corner that is pointing to you and fold it up over the ingredients
4. Take both sides and fold it into the middle
5. Roll the wrap up so that it is in the shape of an eggroll
6. Dab the raw egg on the opening to seal
Repeat the steps until you are finished
Frying the Egg rolls
Pour vegetable oil so that it is halfway in the wok or pot. You can also use a deep fryer. Let the egg roll cook until it is light golden brown.
Test to make sure that it is cooked ( It should be fast since you just precooked it)
Continue process until you are done and Enjoy!
