How to Make Crock Pot French Onion Soup

We all love French Onion Soup. In the Summer most folks feel it's too hot to make soup. Here's a crock pot/slow cooker recipe that will make this a snap. This recipe is hearty enough that with a salad it makes a great light meal. It's time to once again roll up your sleeves, take off your rings, wash your hands and get cooking. Somebody please put on a fresh pot of Columbian Coffee.

French Onion Soup

Ingredients:

3+ pounds onions (Sweet are best but use what's on sale)

¼ cup brown sugar

¼ cup Worcestershire Sauce

¼ cup Garlic Powder (Not Garlic Salt)

12 Beef Bullion Cubes

2 Quarts water

1 stick butter (Optional)

Directions:

Peel all onions, slice half and diced half. (This makes a thicker soup) place directly in crock pot. Add brown sugar, Worcestershire sauce, garlic powder, and bullion cubes. (if you are preparing this the night before wait on the water till the morning) Turn crock pot on low for 8-12 hours. Add optional butter about 15 min before serving.... That's the way the old farmers made it.

Note:

I would serve this with croutons floating on top then add slices of Mozzarella cheese. See the recipe for Garlic coutons below. Beware you will be enthralled with the aroma when you return home.

Garlic Coutons can be bought or made. In my restaurant days we made over 100 loves of Wonderbread into croutons/garlic toast each week. I suggest if you are using fresh bread you cut it and let it air dry overnight if possible.

Garlic Coutons/Garlic toast

Ingredients

1 loaf dry bread (quarter slices)

1 stick butter (Margarine works too)

1-2 Tablespoon Garlic Powder (Not Garlic Salt)

Directions:

preheat ove 375 Melt butter and stir in Garlic powder, set aside. Place quarter slices of bread on sheet pan. Bake till bread is dark tan but not brown in color...Brush garlic butter on both sides and allow to cool. Put in air tight container and it will stay fresh for 7-10 days.

Two ideas for serving this soup as a center of the plate. One would be a green salad perhaps enhanced with some meat or fish...kinda like a chef's salad of years ago. 2nd though would be some cottage cheese salad. My favorite recipe is below

Cottage Cheese Salad

Ingredients

24 oz carton cottage cheese

15oz can crushed pineapple

2 -4serving size orange Jell-O

Directions:

Mix it, chill it, serve it.
