First off, keep your feelings under control. This is more easily said than done. Tempers tend to flair especially under stressful situations. If your boss is constantly nitpicking every little thing that you do, it can get to you. You have to let things roll off your back. Try not to let your anger build up.
Secondly, make sure that you are doing your best work. If your boss is truly a control freak, he will find something to pick on no matter what you do, however, eliminating mistakes will make it harder for him to find stuff to yell at you about. It will also make you look like you care about your job when you are taking the time to do the job correctly.
Also, be aware of how you react. You can't control what he will say to you, but you can control yourself. Remaining calm is always key. Never yell back at him, and under no circumstance should you hit him. By remaining calm, you'll be better able to think clearly and explain yourself to your boss. It probably won't make a difference, but it will look a lot better to others in the office.
Remember that this is in no way about you, it's your boss. He has a mindset that makes him strive for perfection and needs his employees to be the same way. Nobody can be perfect 100 percent of the time. Most people can't even be perfect part of the time. That will always give him something to pick out and argue with you over.
Most importantly, remember that how you react will affect your overall wellbeing. If you react poorly it could mean losing your job. If you just constantly bottle things up inside, you could take out your anger on someone that doesn't deserve it and it could affect your other relationships. If you don't take out your anger at all, it will just keep bottling up and your mental wellbeing could be affected. So just remember to remain calm, speak clearly, and try not to escalate the situation.
