Use the Big Goons to Beat Up Other Enemies: This move isn't easy, but it is doable. When the Joker puts two of his biggest monsters on Batman in addition to ten or more regular size dudes, the party can get pretty nasty. But if you can get one of the bigger guys to double over in pain, you can jump on his back and control him.
First, throw Quick Batarangs at everyone you see - don't bother aiming right now, just throw them. Make your way through the crowd until you're straight across from one of the bigger monsters. Start throwing a lot of batarangs and maybe even do the Ultra Batclaw a time or two. Wait until the monster doubles over, then maneuver around his back and press the "X" button. This will launch you onto his back.
Then, press the "Square" and "Triangle" buttons as you would for normal combat. This will force the monster's arms to punch back and forth at everything in his way. If there's another monster on the loose, make your way over to him and start beating him up. You can kill him completely from this position.
Hide in the Shadows: The only way to escape Scarecrow's haunting gaze (and imminent death afterward) is to hide in the shadows of every building you see. You can use the "R2" button to crouch for cover. Then, press the "X" button as you walk to make Batman run to his next location before he is found.
How to Defeat the Joker at the End: At the climax of the game, the Joker will take the green formula that turned all of Arkham Asylum's villains into big, hungry predators. This makes him ten times uglier than before, not to mention ten times harder to beat. However, there are ways to weaken his stamina and defeat him.
Start by taking care of all the goons he sends your way. He won't come out to play until you do. Then, when you've finished with the first wave, launch the Ultra Batclaw onto Joker's back, which will bring him careening down the building to the fight floor where Batman is standing. Beat him up a little bit, then let him go back to the top of the building. He will stay out of breath and softened up for the next fight.
After that, you'll get several more waves of goons to fight. Repeat the above maneuver after each wave, and finally, you'll defeat the Joker.
Unfortunately, the ending is pretty anti-climactic. After you kill the Joker, all of Arkham Asylum's inmates get put back into their quarters and Commissioner Gordon is freed from the electric chair. Other than that, it's a quick drop-off back to the main menu. But the fight scenes are challenging and definitely worth the effort.
