How to Make Delicious Stir Fry from Leftovers

Do you see several odds and ends of vegetables and meats in your refrigerator? Here is a recipe I made up the other night using the leftovers in my refrigerator, along with a few staple ingredients in my pantry. I have not included exact amounts of each ingredient because that will truly be determined by what is in your refrigerator. If you have more meat on hand, use it up. If you have more vegetables than meat, that's okay too. It's truly going to be your own concoction. This is just an idea of what I put together. Don't limit yourself to just the vegetables listed here - use whatever you have! I don't own a wok, so I used my deep skillet and that seemed to work well enough. My family thought it was delicious, if that counts for anything. It's easy to make delicious stir fry from leftovers!

What you need:

Chicken breast, diced (cooked)

Zucchini slices, quartered

Carrots, sliced

Garlic, minced

Olive oil

Soy sauce

Ginger, (I used dry spice, but fresh would taste great too)

Green pepper, diced

Red pepper, diced

Yellow pepper, diced

Onion, white, diced

Brown rice, cooked

Skillet, large and deep

Step 1: Decide on which vegetables and meats you'll use in your stir fry. Even if you have two different kinds of meats, say, chicken breast and pork chops, you can use both. Choose vegetables that may be on the cusp of being thrown into the compost pile, but are still good.

Step 2: If you already have leftover cooked rice available, just heat it up prior to the time the stir fry is ready. Otherwise, cook your desired amount of rice per box instructions.

Step 3: Put enough olive oil in the skillet to coat the bottom surface. Turn the heat on to medium.

Step 4: While your skillet is heating up, dice the chicken breast into bite-size pieces.

Step 5: Go ahead and add your diced chicken and minced garlic to the hot olive oil and cover.

Step 6: Prepare your vegetables. Once the meat is heated through, remove it with a slotted spoon and keep hot in another container.

Step 7: Add the vegetables to the remaining olive oil (add more if there isn't enough to toss the vegetables around without sticking). Add the ginger and a few splashes of soy sauce. Toss vegetable mixture until they are heated (tender), but still crisp.

Step 8: Add the diced chicken back to the skillet with the vegetable mixture. Heat the mixture through completely.

Step 9: To serve, put a scoop of brown rice on the plate and then cover it with the meat and vegetable mixture. Serve with additional soy sauce if desired. Voila, you have a delicious stir fry from leftovers in no time!

Warning: If you are prone to heartburn, leave out the onions.
