How to Make Don Pennington's Aspargus Gratan

Y'all know Don Pennington? He's an author that inspires many folks to read and write some material that is great. I read Don Pennington's article today titled "Av Oasis in the Desert" It has inspired me to name this recipe for Don Pennington. Don Pennington's Asparagus Gratan

Ingredients:

1 can Cream of Asparagus soup (Low fat, low sodium is OK)

½ cup cream (Use what you use in your morning coffee)

1+ teaspoon garlic powder (NOT Garlic Salt)

½ teaspoon black pepper

1 teaspoon red pepper flakes (Optional)

1 can mushroom stems and pieces drained

1 can asparagus pieces (drained)

2 cups cubed deli ham (smoked turkey is good too)

3-4 cups cooked pasta (shells, corkscrew, wheels, your choose)

2+ cups grated cheese divided ( I like pizza mixture best)

1 cup salad olives drained (California)

½ cup bread crumbs

Directions:

Preheat oven to 425. Mix Cream of Asparagus soup, cream, Garlic powder, pepper, mushroom stems and pieces,ham, pasta, olives, optional red pepper flakes, and half the cheese. Place into a deep casserole and bake 30 min. stir well and top with bread crumbs and remaining cheese and return to oven for 10 min or till cheese is melted and golden brown

Notes:

The first time I made this the Queen Goddess wanted to know more about Don Pennington and how he had inspired such a great dish. The Queen Goddess also suggested I dot the top of the casserole with butter before adding the bread crumbs and last half of the cheese. I'll let you decide about that.

OK the recipe is now yours. Enjoy it with friends and family or make it and take it to lunch all week. Yes it is that good. I even enjoy it cold at midnight with a large glass of milk.
