Most people think sugar cookies are for the winter holidays only. Not so. You can also create festive Easter sugar cookies. The difference in your Christmas sugar cookies and your Easter sugar cookies is the cookie cutter you use or toppings. For your Easter sugar cookies you will want to choose a frosting or other toppings that are synonymous with Easter such as pastel colored sprinkles instead of green and red or use a Easter bunny cookie cutter instead of a santa clause or Christmas themed cutter. Here is a great Easter bunny lemon sugar cookie recipe to go along with your other Easter festivities.
You will need:
- 3 cups of unsifted flour
- 2 teaspons of baking powder
- 1/2 teaspoon of salt
- 21/2 cups of sugar
- 1 cup of shortening
- 2 eggs
- 1/4 cup of lemon juice from concentrate
- additional sugar
Step 1- Preheat Oven
For your Easter bunny lemon sugar cookies you will need to preheat your oven to 350 degrees.
Step 2- Mix Flour, Baking Powder and Salt
The next thing the Easter bunny lemon sugar cookie recipe calls for is to stir together the flour, baking powder and salt in a small bowl. Once you have done this, set it to the side for later use.
Step 3- Beat Sugar, Shortening and Eggs
The third step calls for you to beat the sugar and shortening in a large mixer bowl. You will want to do this until it becomes fluffy. Then you will beat the eggs into your sugar and shortening mixture.
Step 4- Stir In Dry Ingredients
For the next step you will go back to the dry ingredients that you mixed in step two. Stir the dry ingredients into the large bowl mixture and then add the lemon juice. Make sure all of this is mixed well into the dough.
Step 5- Refrigerate
Once your cookie dough is completed you will need to refrigerate it for about 2 hours.
Step 6- Roll Dough and Bake
After you refrigerate your Easter bunny lemon cookie dough, you need to roll it out onto a cutting board or other clean flat surface. Roll it to be about 1/4 inch thick. Use an Easter bunny cookie cutter to cut out the cookies. Once the cookies have been cut, lightly sprinkle additional sugar onto each cookie and place them on a greased cooking sheet for baking. Bake Easter bunny lemon cookies for 8-10 minutes or until lightly browned. This recipe should make about 8 dozen cookies.
