Easy Apple Dumplings
Ingredients
2 large Granny Smith Apples
2 sticks of real butter (Butter is better)
1 Tablespoon Vanilla extract
2 tubes crescent rolls 8 count (generic is OK)
2 ½ cups granulated sugar (Splenda will work)
1-12oz can red pop (1½ cups if you drink from 2 liter)
1 Tablespoon ground cinnamon
1 Tablespoon ground nutmeg
Directions:
Preheat oven to 375. Spray 9 x 13 pan and set aside. Peel and core apples. Cut into quarters north to south then cut each quarter in half east to west. Roll these fat eighths in crescent roll and place seam down in pan. Four rows, four across. Melt butter in microwave and mix with cinnamon, nutmeg, sugar, and vanilla. Pour this mixture over wrapped apples. Pour the whole can of soda over wrapped apples. Bake for 40-45 min or until golden brown. Be Careful removing from oven. Glaze will still be liquid but will thicken in about 15 min. Be patient it's worth the wait.
Notes:
Best served warm with French Vanilla ice cream. If you make these a day ahead microwave them individually for 30 seconds before serving. You may use other apples but the Granny Smith is my favorite for this dish. You may use margarine but the flavor is different. You may use any citrus flavored soda pop. (My daughter likes Mountain Dew) I like the red pop cause it gives the wrapped apples a cast of red cinnamon color. Remember we eat with our eyes too. These are small enough to enjoy without guilt... If you can eat just one.
