How to Make an Easy Chili Pie

Last week I found a terrific price on John Morrel bulk sausage at K Mart. Would you believe 11 one pound tubes for $10. They were frozen so no problem thawing one at a time. Today was a nice cool day so I was thinking chili but that didn't seem like it was quite right. The idea of Chili Pie stuck into my head. The best enhancement for Chili Pie is Buckeye Fudge. I make my fudge first so it has time to chill before it's dessert time. Bubba's Chili Pie

Pie Ingredients:

1 pound of bulk sausage browned and drained (ground beef or turkey is fine)

2 cans of Chili Beans in gravy. (Brooks is a family favorite)

1 can Yellow Hominy drained (white Hominy works)

1 can diced tomatoes not drained

1 softball sized onion fine diced

1 green bell pepper fine diced

1 cup celery fine diced

1 teaspoon Sea Salt (optional)

1 teaspoon chili powder

1 teaspoon ground cumin

1 Tablespoon garlic powder (more if you dare)

Topping Ingredients:

1 Cup yellow Corn Meal

1 Cup all purpose Flour

1 teaspoon Sea Salt (optional)

1 Tablespoon Baking Powder

3 Tablespoons melted butter (oil does work)

1 Cup Buttermilk (soy milk does work)

1 Cup grated Cheese (Cheddar is better)

Directions:

Preheat oven to 375. Mix all pie ingredients and put into a greased 9x13 pan (May use two greased 8x8 pans and freeze one) Mix topping ingredients and spread evenly over pie. Bake for 25-30 minuets or till topping is golden brown. The 9x13 makes eight nice sized servings. I once had four high school linemen tell me four servings was better.

Notes:

Serve this with a cold crisp salad. Perhaps a carrot and raisin salad. Yes I still want a crisp slice of garlic bread too. This does re-heat well and will hold for a week in the refrigerator. Like most chili meals it seems to taste better the second or third time it is heated.
