How to Make Easy Eggnog Bread Pudding

What do you do with all that "Best Ever Eggnog" you made? You can't give it to the kids or serve it to adults who choose not to consume alcoholic beverages. This simple, quick idiot-proof dessert will yield an impressive comfort food that everyone can enjoy.

Ingredients:

3 C Best Ever Eggnog

8 Slices Whole Wheat Bread (set out to dry for a few hours)

1 C Welch's Cranberries & Spiced Apples Dried Fruit Bits

1/2 C Chopped Pecan Pieces

2 Tbsp Brown Sugar

Instructions:

Preheat oven to 375⁰

Cut the bread slices into one inch cubes and place into large mixing bowl. Add 3 cups Best Ever Eggnog, the dried spiced fruit bits and chopped pecan pieces. Mix well and let sit for about 10 minutes.

Distribute the mixture amongst ramekins.

Place ramekins in a large roasting pan. Fill the pan with enough water to reach almost halfway up the sides of the ramekins.

Bake for approximately 25 minutes or until a knife inserted near the center of a pudding comes out clen and the tops are puffed and golden.

Remove ramekins to a rack, sprinkle with the brown sugar and let cool. Serve hot/warm with vanilla ice cream or room temperature/chilled with a generous dollop of whipped cream.

Tips:

Vanilla ice cream or whipped cream will be necessary accoutrements as it tones down the strong taste of the "Best Ever Eggnog".
