EZ Wedding soup
Ingredients
1 Tablespoon butter
1 Tablespoon olive oil
2 boxes low sodium chicken stock
1 box low sodium vegetable stock
1+ Tablespoon Garlic powder
½ Tablespoon fresh ground pepper
1/2 bag frozen meatballs
1 medium onion minced
1 cup celery fine diced
1 15oz can sliced carrots drained
1 15oz can spinach drained run knife through
1 15oz can diced tomatoes not drained
1 cup BB pasta (aka acomo pepe Italian for "peppercorns", they look like tiny bead-shaped pasta)
Grated Parmesan or Romano cheese
Directions
Heat the butter & olive oil over medium-low heat in a large heavy-bottomed soup pot. Add the onion, carrots, celery, garlic powder, fresh ground pepper, and saute until softened, 5 to 6 minutes, stirring occasionally. Add the chicken stock, vegetable stock and bring to a boil. Add the pasta to the simmering broth and cook for 6 to 8 minutes, until the pasta is tender... then the meatballs to the soup and simmer for 1 minute. Taste for salt and pepper. Stir in the spinach and cook for 1 minute, until the spinach is just warm. Ladle into soup bowls and sprinkle each serving with lot's of grated Parmesan or Romano cheese.

My favorite Italian lunch is a bowl of wedding soup enhanced with some fried Italian peppers and a triple decked Italian Grilled Cheese sandwich.

3 sliced Italian Pan Bread
2 slices Provolone cheese
3 slices Muenster Cheese
Garlic butter
Directions
Spread garlic butter on one side of bread and place on flat top grill. Place Provolone cheese on top of one slice, place Muenster cheese on top of one slice and leave the 3rd slice empty. When the cheese begins to melt stack together, cut diagonal and serve.
