How to Make an Easy Italian Wedding Soup

Enhanced with a Triple Decked Italian Grilled Cheese

Bubba
Y'all know there is never a hard recipe if it is something you love. I love to take these over worked recipes and make them simple. The novice cook can enjoy them as well as the busy workin' couple that has very little time available. I love long cookin' soups. The flavor can not be beat. Swanson and others have been marketing chicken, beef, vegetable broths that will give us long cookin' flavor and low sodium too. Celebrate Life Today... Lets take off our Bling, wash our hands, and make a pot of soup!

EZ Wedding soup

Ingredients

1 Tablespoon butter

1 Tablespoon olive oil

2 boxes low sodium chicken stock

1 box low sodium vegetable stock

1+ Tablespoon Garlic powder

½ Tablespoon fresh ground pepper

1/2 bag frozen meatballs

1 medium onion minced

1 cup celery fine diced

1 15oz can sliced carrots drained

1 15oz can spinach drained run knife through

1 15oz can diced tomatoes not drained

1 cup BB pasta (aka acomo pepe Italian for "peppercorns", they look like tiny bead-shaped pasta)

Grated Parmesan or Romano cheese

Directions

Heat the butter & olive oil over medium-low heat in a large heavy-bottomed soup pot. Add the onion, carrots, celery, garlic powder, fresh ground pepper, and saute until softened, 5 to 6 minutes, stirring occasionally. Add the chicken stock, vegetable stock and bring to a boil. Add the pasta to the simmering broth and cook for 6 to 8 minutes, until the pasta is tender... then the meatballs to the soup and simmer for 1 minute. Taste for salt and pepper. Stir in the spinach and cook for 1 minute, until the spinach is just warm. Ladle into soup bowls and sprinkle each serving with lot's of grated Parmesan or Romano cheese.

Note

My favorite Italian lunch is a bowl of wedding soup enhanced with some fried Italian peppers and a triple decked Italian Grilled Cheese sandwich.

Ingredients

3 sliced Italian Pan Bread

2 slices Provolone cheese

3 slices Muenster Cheese

Garlic butter

Directions

Spread garlic butter on one side of bread and place on flat top grill. Place Provolone cheese on top of one slice, place Muenster cheese on top of one slice and leave the 3rd slice empty. When the cheese begins to melt stack together, cut diagonal and serve.

Mom said always remember the neighbors. I'm sure you have a neighbor that lives alone. Take them a serving of soup. You might have a co-worker that is fighting a cold. Take them a quart of this Italian penicillin... Mizpah

How great it would be to have you for a neighbor--especially when you make soup. This sounds yummy and I think my hubby would like it. Thanks for sharing. And it's so good to have you back.
